These delicious lettuce wraps are filled with hearty lentils, crunchy nuts and spicy flavours! Perfect for Meal Prep and a yummy dinner the whole family will love!
Organic Ingredients:
1 tbsp avocado oil
1 medium yellow onion, chopped
1 tbsp fresh ginger, minced
1 tbsp lemongrass, minced
6 cloves garlic, minced
1.5 cups red lentils, fully cooked
1 cup water chestnuts, chopped
1/2 cup carrots, shredded
1/2 cup green onions, chopped
1/2 cup walnuts, finely chopped
1/2 cup gluten-free tamari
1/4 cup almond butter
1/4 cup sriracha
1 lime, juiced
24 butter lettuce leaves, washed
Method:
1. To make filling heat oil in a large skillet over medium heat. 2. Add in onion, ginger, lemongrass, garlic and cook for 10 minutes or until onions are soft and beginning to brown. 3. Stir in tamari, almond butter, lime juice and sriracha. 4. Add in water chestnuts, carrots, green onions, walnuts, lentils and cook for 5 minutes or until heated through. 5. Place 3 tbsps of filling into the center of each lettuce leaf. 6. Makes 24 Lentil Lettuce Wraps. Enjoy :)
