Almonds have been an excellent food source for humans for thousands of years. These nutritional powerhouses are rich in vitamin E, omega 3 fatty acids, protein, fiber, and manganese. All of this helps you feel full longer, better regulate blood sugar levels, maintain healthy bones and blood pressure.
Soaking raw almonds for 6-9 hours in fresh water is the best way to prepare them for better digestion and nutrient absorption. Soaking releases an enzyme (lipase) which aids in the digestion of fats, as well as deactivates enzyme inhibitors and tannin in the skin which impede nutrient absorption.
Organic Ingredients:
1 cup raw almonds (soaked)
1 stalk of celery, finely chopped
2 green onions, finely chopped
1 garlic clove, minced
2 tbsp hemp oil
1 tsp Dijon mustard
1/4 c fresh lemon juice
pink salt and freshly ground pepper (to taste)
Instructions:
Soak raw almonds in fresh water for 6-9 hours, until plump. Rinse well, and drain.
Place soaked almonds into a food processor. Process in short bursts until almonds look like small flakes. You don't want to process into almond butter. Place almond flakes into a bowl.
To the almonds, add the chopped celery, green onions, minced garlic, hemp oil, mustard, and lemon juice. Stir well to combine thoroughly. Season to taste with salt and pepper.
